About Us
The Healthy Drive is a student operated food truck, which students at Lyman Hall are properly trained to serve. Customers can enjoy quality meals on the go at a reasonable price. We have participated in many events such as Relay for Life, Taste of Wallingford, Allnex’s Community Day, and Masonic Care Employee Lunch-In. Students in the culinary program here at Lyman Hall demonstrate their professionalism through their service on the food truck in town wide events.
The food truck business begins with a deep understanding of culinary techniques. Students learn how to handle customers and serve an array of food items starting in Food Service 1 & 2 courses. It's necessary for students to work at a well paced time while managing multiple orders in a confined environment. Student chefs must also understand how to prepare individual food items through different cooking methods. For example, grilling is a key element for operating a successful food truck business. The menu for the event made by students based on the costumer's interests. The Healthy Drive is available to be booked for events.

Blackened Chicken Tacos:
Sliced marinated chicken in a flour tortilla topped with a pineapple, tomato, red onion and jalapeno salsa
Pork Carnita Tacos:
Seasoned shredded pork in a flour tortilla topped with cole slaw, pickled onions and a creamy avocado, cilantro and lime drizzle
BBQ Cauliflower & Chickpea Tacos:
BBQ roasted cauliflower ,baby spinach and mashed chickpeas in a flour tortilla topped with a creamy lime slaw and pickled onions

Maple Madness:
Thinly sliced ham topped with brown sugar bacon, arugula, and perfectly melted Havarti and cheddar cheeses with a maple mayo spread, grilled to perfection on multi-grain bread. Served with our house made potato chips
Sweet & Spicy:
Oven roasted Turkey topped with a cranberry jalapeno spread, baby spinach and melted Swiss cheese on multi-grain bread served with a garden quinoa salad,
Pesto Italiano:
Oven roasted pulled chicken topped with roasted red peppers, mozzarella cheese, and a basil pesto spread on grilled Italian panini bread, served with our house made chips,
Junior Cheesy Melt:
Simply delicious melted American and cheddar cheeses on white panini bread. Served with our house made potato chips
Dessert:
Pumpkin Chocolate Chip Cookie

Coke, diet coke, seltzer and bottled water,
Procedure:
First we get our recipe. Next we take an inventory of the ingredients on the recipe, then we order the ingredients we do not have. Finally we demo the recipe and make any changes we feel will enhance the final product.
